For my final act (for now), the place I would take my mum to when she finally comes to visit me, the place that, if I close my eyes whilst sitting in the sun could be a cafe in Fitzroy that's how good the coffee is…. The one you’ve all been waiting for!
Drumroll...
Pilot Coffee.
The flavour, texture and the foam, oh yes, the all important micro foam people! They have it all. And almost more importantly is the consistency of the coffee over all locations at any time of day - trust me, I’ve tried out almost all of them and they haven’t let me down yet.
An oat flat white ($5.30) is the best, and there's not much else to say really. It’s rich, creamy and delicious. I truly get excited when I order it because I know it’s going to taste of home, so if you’re feeling homesick head to a Pilot location and take a seat, you won’t be disappointed.
The consistency is due to the in-house teaching of all their baristas in the Pilot Coffee school (as mentioned in this post I did on Tucana). They also run their own roastery and are dedicated to ethical trading and sustainability throughout the business, which of course is very important to us all.
Pilot often has sales and it’s truly worth getting their beans to make at home (they grind them there if you don’t have a grinder at home). I personally love the Christmas blend they do every year with notes of orange and chocolate - YUM!
